Ridged Gourd 500g
Green chillies 2
Bombay Onion 1
1/2tsp fenugreek seeds
turmeric powder 1/4tsp
Chilli powder full 1 tsp
Curry powder 3/4tsp
Salt 1/2 tsp
Curry leaves 6-7
1st and 2nd extract coconut milk 2 cups
Peel the ridges of the gourd (do not peel the whole outer skin) and cut in to 1'' pieces on the slant. Chop the onion and green chillies.
Add all curry powders, onion and green chilli, curry leaves and salt to the gourd and mix well in a cooking pan.
Put coconut milk and cook covered for few minutes until gourd starting to become tender on medium heat.
Adjust seasoning to taste.Then open the lid and simmer further until the gravy is silky and the gourd is tender. Serve with rice as a side dish.
