Recipe:
Ingredients
1 whole cauliflower
1 medium potato
1 onion
3 green chiiles chopped
fenugreek seeds 1tsp
cinnamon stick 1''
medium tomato chopped
red chille powder 1tsp
turmeric powder 1tsp
thick coconut milk 1 cup
1 cup water
bit of oil for frying (1tbsp)
curry leaves
salt to taste
Method:
-wash and cut the cauliflower in to small pieces.( I use the green outside stems cut out in small pieces too)
- Wash and peel and cut the potato into small piece as the sme size as cauliflower
- marinate the cauliflower with turmeric, chiile power and salt
- heat oil in a pan. add curry leaves, onions,green chille chopped, cinnamon, fenugreek seeds and fry for till the onion start becoming thawed. Then add in the potato bits and fry for a minute. sprinkle bit of salt.
- add in the cauliflower and fry abit. add 1 cup of water and cover and cook till the cauliflower start becoming soft.
- add in the tomatoes and and stir
- add coconut milk and cook the curry is done and the cauliflower and potato pieces becomes tender. but DONT over cook till they becomes mashy either!!
Serve hot. :)
Tip:
sprinkle a pinch of sugar after the curry is done to enhance the flavor
