Recipe: serve 4
Ingredients:
Carrot medium grated
Potato cut in to thin slices and made in to rectangles
capcicum sliced
Olive oil 2tbsp
Chille flakes 1/2 tsp
Tomato cubed
Eggs 4
1tsp soya sauce
1 tbsp tomato sauce
salt and pepper
Method:
Beat the eggs with little salt and pepper. Add in the tomato sauce and beat. Keep aside.
In a frying pan heat oilve oil add potato with little salt and chillie flakes and fry.
When they r half done add int he carrots, capsicum, onion and stir fry for few minutes.
add tomato cubes and stir fry till soft. Adjust seasoning.
Pour the eggs beaten on top, turn the heat up slightly and stir, so that the uncooked egg mixture coat the vegi mixture well and get cooked at the same time. Keep stiring till the eggs gets scrambled and cooked well.
Put on to a serving dish and serve along with bread.
