'' This a quick way to make Thosai..hehe ofcoz there are alternate ready made thosai mixes in the market but this is good to try once in awhile :D''


Serve 8

Undu flour 225g
white wheat flour 225g
1 and 1/2 tsp yeast
water from 1 and 1/2 coconuts
1 tsp sugar
1 and 1/2 1st extract of coconut milk

curry leaves
3-4 dry chillies
1/2 tsp fenugreek
1/2 tsp of mustard seeds
1 medium bombay onions chopped
2-3 tbsp oil
salt to taste


Soak yeast in coconut water with sugar and allow to ferment for 5 minutes.
Mix undu flour and white wheat flour with yeast mixture. When the mixture doubled in size add sufficient 1st extract of coconut milk to be of pouring consistency but not too watery.
In a pan fry curry leaves, dry chille broken in to pieces, fenugreek and mustard seeds and onion until golden brown and add to the batter.
Heat a non stick pan, smear with little oil as for pancakes. pour 1/3 cup of batter. spread out moving the pan in a swirl to form a thin pancake. When little holes appear on Thosai, turn the otherside and cook for a minute or two.
Thosai is ready.


  1. Does this recipe use instant dry yeast or active dry yeast?
