Tomato Rice



''I got this recipe from a Indian blog and made it my own with a some twists. The original recipe had peanuts added to it too.
This one was very tasty and even wonderful as a snack. My mom liked it very much!!!''

Recipe:

Serve: 1

Ingredients:

Rice 1 and half cups
• Tomatoes : 1 (make it into puree)
• Onion : 1/2 ( Medium)
• capsicum 1
• Curry Leaves : 2-3
• Peanuts : 1/8 cup (optional)
For seasonings:
• Oil: 1 tbsp
• Mustard seeds: 1/2 tsp
• Moong dhal (yellow)2 tbsp
For masala Powder:
• Coriander seeds: 1/2 tbsp
• Channa dal : 1/2tbsp
• Fenugreek seeds : 1/4 tsp
• cumin seeds 1/4tsp
salt to taste and pinch of turmeric powder

Method of Preparation :
Fry all the masala ingredients on a heated pan without oil and let it cool for a few minutes. Then grind them into a fine powder.
Boil the tomato and peel the skin off it. And mash it by hand or using a masher into a puree
Heat oil in a pan, add the seasonings and when the seeds sputter, add peanuts and let them fry for few minutes
Now add onions, capsicum and curry leaves and when the onions turns translucent, add the tomato puree, turmeric powder and little salt. Stir.
When its come to a complete boil add the masala powder into it and mix it all together. Turn off the heat and make sure the gravy is thick.
Add rice 1 and half cups and stir while on low heat till well mixed.
Garnish with coriander leaves.
